Seems to me that rest is too long and the interval distance too short for the pace to be that good of a predictor. I've found one of the better predictors is 4x400 with a one lap jog. Total distance is similar to 10x200, but the distance of each interval is closest enough to the 800m race distance that it better approximates how you will be running throughout the race.
I must say, I'm a bit confused why you would change the pace and the number of intervals for your own workout and expect it to be any semblance of a predictor (faster pace, less reps, slower predicted time)... I really couldn't begin to guess what sort of pace that workout predicts, sorry.
